Sensory profile

A nose of green apple and citrus; a bright palate, a fruity-vegetal core, and a dry, thirst-quenching finish with the gin's botanicals prominent.

Quick variations

  • Apple & Ginger Collins: Replace the soda with dry ginger ale; reduce the syrup to 10 ml.
  • Green Honey: 15 ml honey syrup (1:1) instead of sugar syrup.
  • Low-ABV Spritz: 30 ml gin + 30 ml green apple, topped with extra soda; lighter and more brunch-friendly.

Food pairing

  • Fennel, green apple and almond salad
  • Tomato & Basil Bruschetta
  • Raw fish, salmon tartare with citrus fruits
